I have read that alcohol evaporates when heated, I’m just not convinced.

please explain how that happens and how long or high do you have to heated for for the alcohol to evaporate

All of the alcohol evaporates and it is safe for everyone..People have been cooking with it for hundreds of years..There is no harm.

Alcohol once it reaches a temperature of 170 degrees begins to evaporate. While 100% of the alcohol does not evaporate about 99.7% does. That .07% left over is not harmful in any way.
You will want to keep it at at least 170 degrees for about 5 minutes.
What kind of dish are you making btw?
Alcohol boils away at a lower temperature than water, so if you bring something to a boil or simmer, then the alcohol will completely evaporate over time.
Of course, how long it takes depends on how much wine you put in. The best way to test is to smell the steam. You will be able to tell when the alcohol has dissipated.
I cook tomato sauces for my kids with white wine and there have been no drunken stupors yet!
I use cooking wine all the time with my family. As a general rule I add the wine at least ten to twenty minutes before the dish should be done cooking. The heat does evaporate the alcohol and leaves the flavor behind.
